Artificial flowers were preferred to cut flowers from the garden. On the table at Christmas there would be white roses (for the Nativity). At Easter there would be red roses (for the Crucifixion) followed by damask roses (for the Resurrection). Viscount Fairfax was very fond of a calf’s head, and one was ordered each week. Every bit was eaten.
