At Gilling Castle there were 18 servants. When the Viscount and Anne came to York, 11 servants from Gilling Castle looked after them in Fairfax House. The cook was called Martha Brown and the housekeeper was Ann Pyatt. She kept meticulous records. We know what the family ate and how much everything cost.
